No-Crust Quiche with Sausage, Spinach, and Caramelized Onions

It's almost Easter! And what better way to celebrate than by cooking up a crap-ton of eggs?! Let's get going...








Ingredients
  • 6 eggs
  • 8 oz. light coconut milk
  • 1 sweet onion, sliced
  • 1 lb ground sausage (or sausage with casings removed)
  • 2 minced cloves garlic
  • 1 tbs. butter
  • 2 large handfuls spinach
  • 1 tsp. thyme
  • 1/2 tsp. red pepper flakes
  • salt and pepper to taste 

Hardware
  • 9" pie tin
  • olive oil cooking spray

Directions
  1. Pre-heat your oven to 375 degrees F. Spray your pie tin with cooking spray and wipe down until it is just greased. 
  2. Brown the sausage over med-high heat, crumbling it as you go. Cook until golden brown and delicious. When sausage is almost done, add garlic, thyme, pepper flakes, and salt and pepper. Use a slotted spoon to remove from pan and set aside.
  3. Place the sliced onion in the pan with the sausage drippings, adding the butter or olive oil if needed (my sausage was very lean and required more fat). Season with salt. Cook over medium heat for 20 minutes, or until soft, brown, and sweetly caramelized. 
  4. Place the cooked onions on the bottom of your pie pan. 
  5. Add spinach to the pan and heat through until wilted. Layer the spinach on top of the onions in the pie pan. 
  6. Add sausage into the pie pan in an even layer. 
  7. Whisk eggs and coconut milk together and carefully pour into pie pan. 
  8. Cook for 30-40 minutes, or until set. You can stick a toothpick in the middle, and if it comes out clean--it's done! My quiche took 35 minutes. 
  9. Enjoy!


This quiche is a super simple meal to make, and one that will feed you all week! The absence of the crust really makes this a snap to put together, and with less carbs to boot. I've honestly never had a quiche without cheese or a crust (because honestly why would you) but I think I may be converted. To lighten it up even further, I replaced the traditional heavy cream with coconut milk, an experiment that I am happy to say went just swimmingly.
